Chef Manoj Kumar plating a dish — a discipline of care and
presentation he carried into every kitchen he has led, from
Portugal to
the United States.
Carvoeiro,
on Portugal's Algarve coast, is better known for seafood and sunshine than for
Indian food. In April 2019, Chef Manoj Kumar took on the job of introducing
both a cuisine and a way of eating to that market, as Head Chef of The Saffron
Mantra, part of the Gujju's Amigo Group.
He
opened and led the kitchen, and built an extensive Indian vegan menu for local
guests. It was a genuine bet. Indian cooking was not a familiar category for
many diners in the area, and vegan cooking asks a chef to build richness and
flavour without the dairy and ghee that Indian kitchens traditionally lean on.
Diners had to be convinced before they could become regulars.
The
job was as commercial as it was creative. He owned menu planning end to end,
building yearly menus around local events and seasons so the offer stayed
relevant through a tourism-driven calendar. He forecast weekly sales against
business trends, which let purchasing and prep follow expected demand instead
of guesswork. And he managed purchasing, receiving and storage to food-safety
standard, the points in a kitchen where food cost is either protected or
quietly lost.
He
also stayed close to the guest. He engaged directly with diners for feedback
and fed it back into menu iteration. In a market where the concept is new, that
loop matters more than in an established one. Guests reveal what they do not
yet understand, which dishes they take to and what they are willing to pay for,
and a menu that listens can adapt faster than one written in isolation.
For a
chef who had spent years in large hotel operations, the Portuguese chapter was
a different kind of test. There was no brand behind him to carry the concept,
no established customer base and no large team of specialists. He had to be the
cook, the planner, the buyer and the host all at once.
The
Saffron Mantra role shows a side of his career that the earlier hotel years
only hinted at: the ability to take a concept from idea to a working kitchen in
a market that had no template for it.
